Makes: about 2 dozen
Make-Ahead: Strawberries can be prepared and refrigerated up to 8 hours ahead.

Ingredients:
1 lb fresh large strawberries with stems
8 oz high-quality dark chocolate (71% cacao), coarsely chopped
2 oz high-quality white chocolate, chopped

Additional toppings (optional): chopped pistachios, chopped freeze-dried strawberries, sprinkles, strawberry powder

Method:

To prepare strawberries:
1. Lightly rinse strawberries with cold water and arrange them on paper towels. Pat each strawberry dry with dry paper towels to ensure no moisture remains on strawberries. Be sure strawberries are completely dry before dipping them into chocolate since any moisture on the strawberries will cause chocolate to seize and become firm.

To temper the chocolate:
1. In a medium bowl set over a wide saucepan of simmering water, stir 6 oz of the chopped chocolate until it has just melted and reaches 130° to 135°F. Remove the bowl from the saucepan and reserve about 1/3 cup of the melted chocolate in a warm place. Add the remaining chopped chocolate to the larger amount of melted chocolate and stir constantly until the temperature of the melted chocolate reaches 82° to 84°F. Add the reserved melted chocolate and stir constantly until the temperature reaches 88° to 90°F.
2. To test for proper tempering, dip a small spoon into the chocolate and shake off any excess. Set the spoon aside for about 5 minutes. If after 5 minutes, the chocolate has not set, the chocolate needs to be stirred a bit more.

To dip strawberries:
1. Place dark chocolate in small bowl and set bowl over small saucepan of barely simmering water. Stir constantly until chocolate melts. Remove pan from heat.
2. Holding 1 strawberry by green stem, dip strawberry into melted dark chocolate. Gently shake some of excess chocolate back into bowl.
3.Place strawberry on nonstick baking sheet. Repeat with remaining strawberries and dark chocolate.
4. Allow dark chocolate to set.

To garnish strawberries:
1. Place white chocolate in another small bowl and set bowl over saucepan of barely simmering water. Stir constantly until white chocolate melts. Pour melted white chocolate onto sheet of plastic wrap. Gather sides of plastic wrap and hold pouch of white chocolate firmly. Twist pouch. Pierce bottom of pouch with skewer and drizzle white chocolate decoratively over chocolate-dipped strawberries. Reserve any remaining white chocolate in pouch for another use. Sprinkle with additional toppings and set aside at room temperature to let white chocolate set.
