Brown Butter Tahini Oatmeal Chocolate Chunk Cookies
Ingredients
* 9 tablespoons unsalted butter
* 1 cup light brown sugar
* 1/2 cup tahini
* 1 large egg + 1 egg yolk, room temperature
* 1 teaspoon vanilla extract
* 1 cup flour
* 1/2 teaspoon salt
* 3/4 teaspoon baking soda
* 1 dark chocolate bar, chopped into chunks
* 3/4 cup rolled oats
* 3-4 Medjool dates, chopped
Instructions
1. In a medium saucepan over medium heat,
melt the butter.
2. Continue cooking, swirling the pan
occasionally, until the butter turns a deep
golden brown and smells nutty (about 5-7
minutes). Watch closely, it can go from
browned to burnt quickly!
3. Remove from heat and let the butter cool
If you’re not familiar with my girl tahini,
to lukewarm.
4. In a large mixing bowl, combine the browned butter, light brown sugar, and tahini. Stir until smooth and creamy.
5. Add the egg, yolk, and vanilla extract
6. In a separate bowl, whisk together the flour, salt, and baking soda.
7. Gradually fold the dry ingredients into the wet mixture until just combined. D
8. Gently fold in the rolled oats, chopped HINI dates, and dark chocolate chunks. MI COOKIES
9. Cover the dough with plastic wrap and refrigerate for at least 1-2 hours, or overnight for even better flavor and chewiness.
10. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
11. Scoop about 2 tablespoons of dough per cookie onto the baking sheet, spacing them 2 inches apart.
