As a recap, My wife and I found a box of old recipes in an old farm house we moved into. Some of them were insane, so we decided to cook one or two recipes per week until we get through the entire box. We will do every one, regardless of how bad we think it will be and we will follow the recipe as closely as we can within reason although we may scale it down to avoid food waste. 

 

I made two yesterday and I will post the second one tomorrow, but I wanted to start off with the worst one. 

 

I can't really describe the flavor beyond "Weirdly Tropical". The lemon really expressed its self in this recipe and was a lot more prominent than I expected. Truth be told, my wife hated it, but I was not totally against the flavor. Would I ever make this again? No… but it was at least edible.

 Knowing I probably would not like the recipe as it was, I tried a few variations. 

Following the recipe directly led to the flavor described above. I also made versions with no banana, versions with the cornflakes incorporated into the mashed potato balls, and versions with olive oil drizzled over them.

The version that was just no banana was actually not terrible and I think that sweet potato balls covered in cornflakes could actually be pretty good and easy. Maybe no lemon next time.

The version with the cornflakes mixed with the potato was too dry and the olive oil just made the cornflakes chewy.

 

Overall, 3/10.

Tomorrow I will post the porkchop that was essentially just boiled in cherry pie filling.

    #SPICED APPLE WEDGES
    *(Makes 8 servings)*

    2 cups granulated sugar
    1½ cups water
    ¼ teasp. salt
    2 sticks cinnamon, 4 inches long
    ¾ teasp. whole cloves
    1 blade mace, 1 inch long
    4 medium baking apples

    Combine sugar, water and salt in a 10-inch skillet. Tie spices in a cheese cloth bag and add. Boil 2 minutes. Peel, core and quarter apples. If apples are extra large, cut into eighths. Add to boiling syrup. Cook, uncovered, until tender (about 10 minutes), turning carefully to cook uniformly. Remove apples and cool. (Reserve syrup for cooking more apples.) Serve with ham or pork.

    #BANANA-SWEET POTATO BALLS
    *(Makes 8 servings)*

    2 pounds fresh sweet potatoes
    1 tablesp. butter or margarine
    1 teasp. salt
    ⅟₁₆ teasp. ground black pepper
    ¼ teasp. grated lemon rind
    ¼ cup granulated sugar
    1 egg, beaten
    2 medium bananas
    3 cups crushed cornflakes

    Scrub sweet potatoes. Boil whole in sufficient water to cover, until tender. Remove skins and mash. Add butter, salt, pepper, lemon rind, sugar, and egg. Mix well. Shape potato mixture into 8 balls, wrapping each around a 1¼-inch chunk of banana. Roll in cornflakes. Place on a lightly greased cookie sheet. Bake in a preheated oven at 350° F. for 15 minutes. Serve with pork or ham and a crisp pineapple studded coleslaw.
