
Giga crunchy way to do them:
Peel and cut into smaller pieces
Boil for 10-15 min (add baking soda and salt to water)
Rinse off water and let them steam off for a bit
Toss them around to roughen and make the surface real mushy and broken
Dry them for 1h on a rack, preferrably in oven on 50c convection til the surface is dry
Grab a cast iron pot/skillet/tray, add the potatos, add oil so it only covers the bottom half of the potatos
Put in oven 180c until theyre super golden brown, toss/stir them every 20-30min
These are so insanely crunchy, the inside has mostly pulled back from the outer crunchy shell, its amazing how good they are.

What are the weekend plans? These potatoes smothered in a good homemade sauce (any kind you like), a very cold pineapple juice, and watching any of my favorite shows. This is art.
