Hola! Inspired by @Flapjackk777 making Kielbasa tacos. I thought since Keilbasa is commonly served with Sauerkraut, and onions- make a take on tacos going in that direction. I made a pickled jalapeño, carrot, and onion salsa with a decent amount of stone ground mustard. I cut the kielbasa into coins and fried them up in some olive oil. I also made white corn tortillas for the whole thing. Overall- excellent concept. 10/10 will make again!
