Ingredients:
1 cup lentils with 1/4 onion 1 garlic clove and 2 bay leaves
3 tbsp fresh lime juice
2 tbsp olive oil
1 tsp mustard
1 tsp honey
1 tsp chipotle in adobo sauce
1 garlic clove, grated
1/4- 1/2 tsp ground cumin
½ tsp smoked paprika
¼ tsp chili powder and chili flakes
½ tsp oregano
1 1/2 tsp salt & ½ tsp black pepper or to taste
2 small cucumbers
1 cup chopped tomatoes
1/2 red onion
1 jalapeño or Serrano pepper
1 roasted red bell pepper
Cilantro
Queso fresco

  2. This is a great recipe we do a nopale salad similar I didn’t discover Lento beans until my grandma made them for me. They’re so delicious. I never knew what I was missing out on great recipe. I’m gonna have to try it.

  3. I once made lentils in a slow cooker and wound up messing it up. I think it was too mushy, if I remember right. How do you know they're cooked enough, Claudia?
