I drink this all the time, one of my favorites to break out for people who are just getting into wine. I find it always changes, sometimes drastically, with whatever I’m eating – much more so than more delicate wines. The strawberry always comes through though.

Tavel makes some of the best age able rosés. In fact they ONLY make rosé.

Tavel is great. Do t be afraid to drink 6-8 year old vintages. They can develop a kind of overripe strawberry / fruitleather quality after a few years.

Here for the mandatory tavel upvote! Discovered it last year. And you’re right it’s a chameleon. I’ve tasted everything from grapefruit to watermelon. Sometimes it even comes across like a non sparkling blanc de noir depending on the food pairing. Such a rich interesting region. And reasonably priced for now.
