That’s a recent salad I had for lunch. Leaf lettuce, kale, spinach, carrots, celery, black beans, pickled purple cabbage topped with lemon vinaigrette. For the last 3-4 months I have been focusing on lessening the amount of ultra processed foods in my diet. I have lost weight, I have greatly diminished the number of headaches I experience, lessened the number of days I experience debilitating fatigue, and all but eliminated the ocular migraines I used to get several times a week. In addition to the Mediterranean, I also cook a lot of Asian inspired stir fries and I eat a lot of green salads topped with veggies and homemade dressings. My favorite food/ cooking books are Good Things by SaminN, The Complete Mediterranean Cookbook by America’s Test Kitchen, and a cookbook I received as a wedding present 40 years ago, More-With-Less Cookbook by the Mennonite Central Committee. I also get a lot of inspiration from cooking shows and You Tube videos with Samin Nosrat, Sohla El-Waylly, and Alison Roman. I love those three women. They’re fun to watch, so creative, and encouraging! I’d like to hear from you – where do you get your inspiration?

I was diagnosed with several autoimmune diseases three years ago, and my doctors recommended I do the Med diet. I finally did when my adult son who lives with us (he’s intellectually disabled) was diagnosed with high blood pressure. If you’re still reading and you’re curious, the autoimmune diseases I have are scleroderma, autoimmune hepatitis/ primary biliary cholangitis, Sjogrens, and uveitis.

    It sounds like you had blood sugar swing headaches from eating poorly. When I used to eat fast food daily, I would get the most intense migraines of my life if I went a day or two without it. I would end up sitting in the shower for an hour, just blasting my head with water to get through them. I never even connected it to the sugar and carbs until I stopped eating unhealthily and they completely went away. Now that I’ve realized it, junk food doesn’t even feel remotely enticing to me.
