Honey Dijon Chicken Thighs 🍗

🛒 Ingredients:
-2.5 lbs (1135g) boneless, skinless chicken thighs
-2 tbsp olive oil (30g)
-2 tbsp Dijon mustard (30g)
-2 tbsp honey (42g)
-1 tbsp apple cider vinegar (15g)
-1 tbsp minced garlic
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp smoked paprika
-1/2 tsp salt
-1/2 tsp black pepper
-1/4 tsp red chili flakes

📋 Instructions:
-combine all of the ingredients for the marinade into a small container; mix well
-pour into a large bowl with the chicken; coat the chicken evenly
-cover and rest for at least 20 min up to overnight (optional)
-roast in the oven at 425F for about 25-30 min until chicken is 165F in the center
-rest for 10 min before cutting into bite-sized pieces

Roasted Potatoes 🥔

🛒 Ingredients:
-900g baby gold potatoes (about 2 lbs), halved
-1 medium red onion, medium diced (200g)
-2 tbsp olive oil (30g)
-1/2 tsp garlic powder
-1/2 tsp onion powder
-1/2 tsp smoked paprika
-1/2 tsp salt
-1/2 tsp black pepper

📋 Instructions:
-place the potatoes and onions on a baking sheet
-drizzle with oil and season; mix well
-place potatoes flat side down
-roast in the oven at 425F for 25-30 min until crisp on the outside and fork tender in the center

Roasted Green Beans 🌿

🛒 Ingredients:
-600g fresh green beans (about 1 lb)
-1 tbsp olive oil (15g)
-1/4 tsp salt
-1/4 tsp black pepper

📋 Instructions:
-place green beans on a baking sheet
-drizzle with oil and season; mix well
-roast in the oven at 425F for 20-25 min until crisp and tender
