ok, let's be honest here: 'built an empire on sustainability' while serving meat and fish sounds a bit misleading, no? what you mean to say is that they aren't wasting much stuff and cook with things other's wood throw away, that's not 'sustainability' by any stretch of the imagination…

Aussie here. I am surprised at their pricing – 44 squid (sans Krug of course ) is very reasonable. I'd eat there in a heartbeat. Very impressive business model.
Man your channel is so, so good. I've worked as a chef for most of my life, and seeing how the Fallow boys changed the game really inspires me. Ironically, I want a way out of the kitchen due to a long term injury which, over time, has made working on my feet extremely challenging.
Perhaps there is a space for me in the world of social media food reviews and critiquing…
Haven't been to London in almost 15 yrs but after following Fallow, I need to go back and check it off my list.
Alexander the Douche
These guys definitely busting their asses off, kitchen is not an easy work. My mom has a restaurant with simple Vietnamese dishes and it already takes a lot to get it right. But these guys they are really great, the Restauranteur joining them is probably the key move. Just only good cooking isn’t enough nowadays, proper management and a sense for business (publicity, social media etc.) is vital for a business.

They are unafraid to share knowledge and recipes. Both are magic. You give the, away and still have them.
I don't think it's Michelin level. Yes two Chefs that come from that level of cooking but I don't think their restaurant is that level.

The loud music, whilst you are trying to talk, also makes your accent hard to understand. What do I know but when you're talking over b-roll, you don't need the obnoxious wannabe rock music playing in the background and fighting for the focus. It's not needed and does nothing. The restaurant footage and your dialogue IS enough. The music, unneeded as it is, is enough to make me switch off the video after less than 5 minutes. I'm over here checking to make sure a different video isn't playing in another tab on my browser, that's how unplaced your background music is. Music and B-roll or dialogue and B-roll, you don't need both at the same time.
Butter and a cartouche seem to be the key ingredients.

I've been here and didn't even realise it was them… just talked up, asked for a nice table in the sun and they made it happen… not pretentious. Just fucking great food.
Love watching those guys, but when visiting there was a bit disappointing, the fish head was unique but not good enough, the chocolate cake dessert was just meh not good.
I had a terrible experience at Fallow in November last year. I was so excited to go and booked months in advance. Our server was extremely pushy, disappeared for long stretches of time then reappeared and pushed us to order quickly telling us they had to turn the table over. My wife's mushroom burger was oversalted to the point of being inedible, my daughter's fish was so fishy-smelling it was unappetizing and my lamb was so meagre it may as well have been an appetizer, not to mention cold when it arrived.
We were not rude at all to anyone, but they genuinely seemed shocked when (upon their asking) we told them our reaction and simultaneously acted like it didn't matter.
Overall, I think they put on a show for tout Alexander, but for my family and I – they were a terrible disappointment. I think they could learn a lot from Dishoom, where we ate later in the week and truly felt like we were taken care of and treated with love and class.
8:30 having front of house so knowledgeable and passionate is rare but i suspect that is the leadership and passion of the chefs truly a great restaurant i really want to eat there one day Lord willinjg

Its easy being on your best game, as a chef, when youre expecting prominent critics/reviewers. Thats why they showered you with attention and made sure to provide you the best prepared meals. Anyone with an interest in food can see Fallow is severely overhyped. Their social media push, not substance, has created their "reputation". Their dishes are pathetic. Youre raving about dry corn ribs. Look at the shoddy execution of all those dishes. No finesse and subtlety. Burnt cod head smothered in butter and sriracha (originality?). Brussel sprouts drowned in a similar butter sauce. I could go on. The Google Maps negative reviews are what i have expected for monhs before actually reading them.
