    4th most tender cut on the animal. It’s much more known nowadays. I wish it were less known honestly. Most grocers sell blade steaks instead. At the butcher shop i worked at, we never cut top blade steaks out of them. I think it kind of ruins the best part of that muscle.

    Flat Iron sucks. Worst cut of the animal. Anyone reading this, avoid this cut. Its terrible. Just like chuck, hanger, skirt, and chicken thighs. Dont buy them. Keep the prices down.

    At my store we were forced a few cases of these, already cut and in vacuum bags (idk the exact term). They’ve been sitting out not selling. I have never tried them nor have I ever cooked them. I might need to investigate this cut more personally now. Thank you for this post.

    so insane. made my first one in a ski hut this weekend, one of the better steaks i’ve ever had. Don’t get me wrong, i love my ribeyes but in some ways this was better. little less fatty but nowhere near tough or chewy. man i may never go back to another cut

    My favorite cut, hate that the price has tripled since I started buying them years ago.
    I use to keep about 10 of them in my freezer.

    I SOOO agree. I’ve been slicing it thin (on as much of a bias as I can do it), smashing the pieces with the blade of my knife, salting and then flash cooking in a hot wok. Delicious! Also use in stir fry.
