Is it supposed to be in hot coffee? I would imagine it just turns into a horrid version of egg drop soup. If it was in cold coffee maybe it wouldn’t cook the egg and it might be more cohesive?

Seems like it would come out better if you tempered the eggs by slowly dripping some of the coffee into the eggs, bit by bit, while whisking/stirring.

I miss Vietnamese coffee. I don’t think I’ve ever tried this version of it though.
Have you ever had problems with curdling while adding the eggs? The extra step of tempering sounds like it would make it foolproof.
