Breakfast was a half of a multigrain English muffin with mashed avocado topped with a little bagel seasoning and an over easy egg. I’m a big breakfast person looking for yummy MD friendly ideas!

  1. Good start. You could add some veggies to it. Some red onion, slice of tomato, and some greens (spinach or arugula).

    Or… have it with a small salad, a side of beans, some roasted or sautéed mushrooms, some sweet potato.

    Like the other poster, i’d include some veggies. For me today it would be spinach and tomatoes, perhaps as filling to an omelette..

    My balance in portions of 1/2 veg, 1/4 carb and 1/4 protein comes over the day so it is easier to Evaluate the days consumption

    i had the EXACT same thing, with my tweaks. Whole wheat toast, mashed avocado with a little EVOO/salt/pepper/lemon, over easy egg with salt/pepper. all on a bed of shaved kale/spinach salad that was dressed with a little parmesan cheese, lemon/EVOO dressing, with some cherry tomatoes.

    Now, see – I’d drown that thing in salsa. Not considered Med I suppose, but besides the spice what is salsa but tomato, onion, and garlic.
    As for me, I have the same breakfast 9days out of 10. Lots of fresh berries in oatmeal. I’ve heard of savory oatmeal but no thanks. I love my berries too much. On that 10th day when I’m not eating oatmeal, I’ll make a yogurt parfait with (you guessed it) berries and homemade granola (which is just baked oatmeal 🙄). Or I’ll make an omelette with lots of veggies – caramelized onions, mushrooms, spinach, tomatoes, are my favorites in an omelette
