Beautiful spread. Awesome question. I’d start with 1 tuna, 1 salmon…starting at the bottom working my way up alternating 1 each and then come down in reverse order to end on the tuna.

It’s left to right for a reason. Alternate between lean and fatty, then end on sweet with the shrimp.

I’m offering the salmon and the shrimp to anyone seated near me, the rest doesn’t matter, although tuna and hamachi will always rule the day ….
Depends if I’m saving the best for last. Man who am I kidding, I’m 100% going for that tuna first (at least one piece, then maybe I’ll save one for last?)
