    Quick checklist: (1) Remove gills with a spoon, (2) brush caps with oil and 425F for 15 min first, (3) pack filling tight to prevent shrinking, (4) bake another 12-15 min. Crowd out moisture early or your filling gets waterlogged. What’s your current filling base, and are you counting this as your protein or adding something alongside?
