
Back before we learned about the Mediterranean Diet we had Weight Watchers. This recipe came out in the 1970’s and turns out to be Mediterranean as all hell!
INGREDIENTS
UNITS: US
3 cups nonfat vegetable broth (beef is the best) or 3 cups nonfat chicken broth (beef is the best)

garlic cloves, minced
1
tablespoon tomato paste
2
cups chopped cabbage
1⁄2
yellow onion
1⁄2
cup chopped carrot
1⁄2
cup green beans
1⁄2
cup chopped zucchini
1⁄2
teaspoon basil
1⁄2
teaspoon oregano
salt & pepper
DIRECTIONS
Spray pot with non stick cooking spray saute onions carrots and garlic for 5 minutes.
Add broth, Tomato paste, cabbage, green beans, basil, oregano and Salt & Pepper to taste.
Simmer for a about 5-10 minutes until all vegetables are tender then add the zucchini and simmer for another 5 or so minutes.
Like a lot of soups it doesn’t photograph well. This batch has frozen spinach instead of cabbage.

Oh! Yes! I recall this as being a surprisingly tasty soup. I’d make it even when I didn’t have to. Ha! Thank you for reminding me of it!
I use to eat this. Very good tasting.
Maybe now that we do know about the Mediterranean diet we can skip the probably ultra-processed non stick cooking spray and use a little extra virgin olive oil instead?
I think I’d go full-on minestrone and add some chickpeas or some kind of white beans and maybe some whole wheat pasta.
If you want to tweak the taste even further: oil in pan, follow for sauteinf onion etc, then saute all the veg, then ad tomato, then add stock 😊
I would use real oil to have a little fat for the fat soluble vitamins in the veggies.
