I buy leg of lambs from Costco and cut them up and freeze them for multiple dinners… But while cutting this time I noticed this.

Is it safe? It looks like it might be a lymph node but I'm not an expert

Also if we can just cooked it whole, never would have noticed… So I'm guessing it's probably fine but figured I'd check… Also curious

    It’s a lymph node. I would cut it out of the meat before cooking it, but I don’t believe it would hurt you if you left it in there.

    Lymph node. A good butcher cuts these out carefully, as they can increase the gameyness of the meat. My grandpa was a butcher, and if he was given this piece of meat he would have refused it saying the butcher didn’t know what he was doing. But he was very particular, if you cut it out you’ll be fine.
