  2. Great step by step risotto! My recipe is with shiitake mushrooms which I leave in the pan after frying them with onions and garlic. Then I add soup stock (veg or chicken) and add more water until the rice isn't crunchy. Folding in that butter and parmasean at the end is key. I also top mine with some salt, pepper and thyme. The wife loves it
