  1. 🍝 Creamy Chicken Pasta Primavera

    Seasoning Mix
    1 tsp salt
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp oregano
    ½ tsp smoked paprika
    ½ tsp black pepper

    Instructions

    Season 1 lb cubed chicken breast with half the seasoning.

    Cook penne pasta in salted water until al dente, reserving 1 cup pasta water.

    Heat 1 tbsp oil in a skillet and cook the chicken until fully cooked. Transfer to a plate.

    Add another 1 tbsp oil and cook 1 zucchini (quarter moons) for a few minutes. Add bell peppers (large dice), onion, and minced garlic. Cook until crisp-tender.

    Add zest of 1 lemon, ¼ tsp chili flakes, a cup of pasta water, and about ⅓ cup heavy cream. Add the remaining seasoning and simmer for a few minutes.

    Return the chicken, add a handful of spinach and the pasta, and toss.

    Finish with ⅓ cup grated parmesan and juice of ½ lemon. Serve with more parmesan on top.

    💰 This entire meal came out to about $18 and we even had leftovers for the kids’ lunch.
