Harcha is a traditional Moroccan semolina bread typically served for breakfast or afternoon tea, often enjoyed with honey, butter, amlou, or olive oil. In this video, I show you a foolproof method using simple supermarket ingredients — no mixer, no special Moroccan flour, and no complicated steps.

If your Harcha turns out dry, crumbly, or dense, the issue is usually ratio, resting time, or heat control. This method fixes all three.

500 g fine semolina (≈ 3 cups)
75 g powdered milk (≈ ¾ cup)
75 g vegetable oil (≈ ⅓ cup)
1 teaspoon salt
10 g baking powder (≈ 2 teaspoons)
25 g honey (≈ 1 tablespoon)
300 ml cold water (≈ 1¼ cups)

For Shaping & Cooking:
Medium semolina (for coating)
Neutral oil (for the pan)

Yield: 6–7 mini Harchas (about 4 inches / 10 cm wide, ¾ inch / 2 cm thick)

  6. Can i do this in an oven ? I only have stainless steel but if i use that and wait for it until it's non stick then by that time it will be too hot and will burn the harcha.
