Eggplant “Unagi” Bowl

    I made this a few times already and it is absolutely fabulous. Small changes though cause I am glutenfree.

    You can actually steam the eggplant/aubergine in the microwave! Cut just halfway through the middle. And put on high for 2 minutes. Then open it, flatten and score.

    Also for different texture, coat in starch before pan frying.

    I always leave it a bit longer in the pan to soak up the sauce. Low heat. Adjust the sweetness to your taste.

    It stores well and tastes good when reheated the next day. 😋
