    I made some corn-fed (from my MIL’s bird feeder) squirrel stew once. She also had a huge vegetable garden, and I used them in the stew as well. It was really good and flavorful and I would absolutely have it again if squirrels were easier to come by

    During the Depression in the 1930”s, my fathers side of the family and many rural families dined on squirrels a lot. They used to sell the fur pelts along with it. I’m glad we’ve evolved from this al4ing with calves feet.

    I’ve never had stewed squirrels or boiled calf’s feet but I’m willing to give them a try today. Much better than yesterday’s codfish on toast for breakfast.

    As a child, my father-in-law used to have to hunt squirrels for dinner for his Cajun grandparents. They weren’t poor; it’s just something they did.

    As for my grandparents who hunted and trapped, I know there was a lot of pheasant, rabbit, and deer, but now I realize I never saw squirrels on their property even though they were elsewhere. When my mom told me to stay out of the kitchen when grandma was making sausage, I just assumed it was so she could focus. Later I assumed it was because I would break into tears if I saw my yeard bunnies end up there. Now I wonder if there were squirrels too. Thanks OP 🙁

    I don’t think the calves’ feet broth would be as good addition to gravies as the author thinks. Lemon juice, mace, and cloves are not flavors I typically like with my mashed potatoes.

    So, my mom grew up in rural Vermont and ate a lot of squirrel. She said they always rolled the squirrel meat in baking soda and let it sit for a half hour to tenderize and remove some of the gameyness.

    I like the description of the cornmeal or cornflour even though it confuses me a little bit. “Take two cups grains of gold…” Brand? Size of grind? Coarse yellow cornmeal?

    Also baking powder would have been double acting? If it was single acting they would have just listened baking soda and cream of tartar as ingredients?
