    I used to buy gallon jugs of green sriracha from this guy that was like 5 feet tall and was Greek for some reason. Stopped by his commissary space one day and his staff had no clue where he was, the rumor was he dipped out on some gambling debt — sold a few bulk produced items to other restaurants in the area

    I miss that sriracha. That shit was delicious.

    He’d show up in a purple velvet track suit before we opened with like 4 gallons and be like “My friend! I think you will especially like this batch today.. ”

    And I’d go “oh yeah? Why’s that?”

    “Because it is the exact same as the last batch. And it is the best”

    One of the demands by Huy Fong of underwood was no green peppers. Whenever Huy Fong tried to cut it with Mexican sourced peppers, the farmers would send green in a “beg for forgiveness” gambit.

    In the past Huy Fong has literally stopped production because of “Too many green peppers”.

    In the love letter documentary, they got the old man on tape demanding no green.

  11. this is the problem with huy fong now. no consistency. even if it was red.

    they buy whatever peppers they can get the best deal from. sometimes it’ll be good, sometimes not.

    thats why some people prefer underwood. its way more consistent since they have 30 years of growing peppers for siracha. they need better garlic though.

    They didn’t have “supply issues”,n they fucked their main supplier who then sued and won. They now make their own sauce as “underwood farms”

    Just get the underwood sriracha from costco. Taste 10x better than Huy Fong in it’s prime despite being the same peppers.

  22. Honestly the peppers they use for this green one are top notch. I think it’s tasty. But also I obviously miss the OG classic

    I make hot sauce and for it to be brown it’s not a-few unripe peppers- it’s like half the supply. And unripe peopers don’t have the flavor and heat that ripe red peppers do.

    This batch gonna suck.
