Assuming you primarily eat these for dinner? Only having a microwave at my work sort of kills my ability to do meal prep like this unfortunately

I used to batch cook burritos once a month and burned myself out trying to roll them all in one day. Now I prep the fillings Saturday, chill them overnight, then roll and freeze Sunday morning when my hands are fresh. Chicken thighs at 375F for 25 min stay juicy and cost half what breasts do. Doing it this way, I actually stick with meal prep instead of giving up halfway through.
