Been a while since I’ve done creamy chicken Alfredo

    Ingredients+recipe

    * Chicken breast
    * Unsalted butter
    * 35% whipping cream
    * Parmesan cheese
    * Fresh parsley
    * Sweet onion, garlic & thyme
    * Black pepper, onion powder, garlic powder, ginger powder, paprika

    – Slice chicken breast in half then dice into very small pieces (I like my chicken breast cut up as small as possible)

    – Marinade 8-12hrs/overnight with a blend of sweet onion, garlic and fresh thyme leaves. For my powders, I add: table salt, black pepper, onion powder, paprika, garlic powder and ginger powder. (I usually use 1/2 Tsp of salt/lb of meat and a few dashes of soy sauce to top it off)

    – I don’t use exact amounts, however for my sauce I used: 550g of 35% whipping cream, 250g of freshly grated Parmesan cheese (I never use the powdered stuff), 170g of unsalted butter.

    – I start by adding hot tsp water to a pot to boil my pasta and have the pasta ready to go.

    – I then take a large frying pan and coat it well with olive oil.

    – While the olive oil is heating up I let my water boil to the pasta (salt to taste)

    – I begin to pan sear my chicken until I like how browned it is. At this point I taste it and add extra salt if necessary.

    – I then set that aside in a different dish and wait for my pasta to be done.

    – Once my pasta is done, I melt my butter into the same pan that I seared the chicken in.

    – When the butter has fully melted, I add my whipping cream and a few dashes of the same seasoning blend I used to marinade the chicken (minus the ginger powder)

    – I bring this to a simmer and then slowly or all at once add all the grated cheese (I haven’t noticed any difference by adding my cheese slowly or quickly once I mix it very well).

    – I then add my pasta and mix it in well, followed by the chicken. I turn the heat down low and leave it maybe 5-6 minutes. During this time, I cut up my parsley to add when it’s all done.

    Creamy Alfredo pasta with most meats is one of my favourites. It’s very rare for me to cook chicken breast as I simply don’t enjoy it that much, but with Alfredo pasta and diced small I don’t mind.

    This is just a bit of extra info. I usually take my chicken out the fridge and let it sit uncovered for 20 minutes or so before cooking, so I’m not adding it cold to the pan.

    I also grate my cheese during the time and prepare my dry seasoning powders that I’ll add to the sauce. I add minced garlic usually, but simply forgot this time.

    I also wash as many dishes as I can during this time. Once my food is done cooking, there’s not usually much cleanup left. Cooking in clutter and having lots of cleanup after drives me nuts, so I usually wash things as I go.
