GILLETTE, Wyo. — The Consumer Health Services Division of the Wyoming Department of Agriculture conducts inspections of retail food establishments throughout Wyoming (where there is not a local health department that does inspections) to help ensure safety of Wyoming residents.

Campbell County establishments are inspected at least once a year by the WDA. All of these reports are made public and can be found on the WDA’s website. It will only include the routine inspections and not the follow-up or other kinds of inspections.

According to the WDA, establishments are either in or out of compliance with a non-critical (non-food-related) or a critical violation (which can cause a foodborne illness).

The WDA explains that while it is looking for deficiencies, the organization’s “main goal is to educate the business.”

Its report is made to help the businesses understand unsafe practices and ways to correct them.

Any violation makes the business be out of compliance; however, violations can be on different levels, meaning not being in compliance does not necessarily indicate that a business is unsafe.

Inspections are a “snapshot” in time and the violations are often corrected before the inspector leaves the facility. Dependent on the severity of the violation, the business will have anywhere between 10 and 45 days to correct it.

Comments: Handwashing sink that was in bar area was removed during renovation. Plan Review was not submitted for this change. Kitchen paper towel dispenser was not operational during inspection. This was the only accessible hand sink for bar. Hand washing sinks shall have disposable paper towels at all times to allow for proper hand washing and drying. Walls behind ice bins in second story wall have open holes to raw wood where beverage lines were cut out. All walls in food areas shall be repaired in a manner that is smooth, durable, easily cleanable, and does not have holes.

Comments: Raw meats were being stored with, next to and above ready to eat foods. This was discussed with employee and was corrected during inspection. Several items on steam table were were at or below 118f. These items were put onto steam table with out proper reheating prior to. Items were removed and reheated during inspection. Several items were not labeled or date marked. This was discussed with employees and was being corrected during inspection. Some items were past expiration date in reach in cooler. This was corrected during inspection, items were discarded. Sanitizer solution was not available for wiping cloths. Soiled wiping cloths were found through out facility. Corrected during inspection. Spray bottle with red solution did not have name on bottle. This was corrected during inspection.

Comments: Hot holding unit holding mashed potatoes and gravy held both items at 109F. It was discussed with manager who placed both items in oven to rapidly reheat and wait for hot holding unit to heat up. Refrigeration unit holding salad dressings and sour cream was holding dressings at 60F. It was discussed with manager who voluntarily discarded all items out of temperature in unit. Refrigeration unit shall not be used until it has been repaired or replaced in a manner that food can be held at 41F or below.

Comments: Raw meat in food safe containers observed stored above udon noodle cases in walk-in cooler. It was discussed with manager that raw meat products shall be stored below ready to eat food items. Walk-in cooler was holding raw food items between 43F-45F. Cooler unit was turned up during inspection. Customer self-serve refrigeration units observed holding food between 43F-45F. This was discussed with manager who turned up units. Follow-up will take place within 24 hours to ensure that temperatures were corrected on units. No sanitizer buckets observed at beginning of inspection. It was discussed with manager that sanitizer shall be available from open to close to sanitize food contact surfaces throughout kitchen. Test kit not available for sanitizer at time of inspection. It was discussed with manager that test strips shall be available in kitchen at all times to allow for proper concentration of sanitizer. Mechanical dishwasher was unable to reach 180F final rinse temperature during inspection. Temperature gauges on dishwasher were not working. It was discussed with manager that three-compartment sink shall be used instead of dishwasher. Dishwasher shall be repaired or replaced. Used wiping cloths observed throughout kitchen not stored in sanitizer. It was discussed with manager that rags shall be stored in sanitizer at all times to avoid bacteria growth.
