Spiced oatmeal raisin cookies
INGREDIENTS
* 1 3⁄4 cup flour
* 3⁄4 tsp baking soda
* 3⁄4 tsp baking powder
* 1⁄2 tsp salt
* 1⁄2 tsp cinnamon
* 1⁄2 tsp nutmeg
* 1/4 tsp cayenne pepper
* 1⁄2 lb (1 cup) butter, soft
* 1 1⁄2 cup brown sugar
* 1⁄4 cup sugar
* 2 eggs
* 2 1⁄2 tsp vanilla (I add 4)
* 1 cup raisins
* 3 1⁄2 cup rolled whole oats
In mixer beat eggs, brown sugar, sugar and vanilla until well incorporated.
In large mixing bowl whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cayenne pepper,
Add dry ingredients to wet and mix until incorporated. Scraping sides of bowl if needed.
Add oats once all combined mix on low or fold in raisins.
Bake at 350 for 10-15 minutes. Once bottoms are set, edges turn brown and tops of cookies are no longer visibly wet is when I pull them out of the oven (around 13 minutes) resulting in a super chewy cookie. If more crispy cookie is desired bake longer.

The cayenne sounds like an interesting touch..
My favorite is brown butter ,chocolate chunk, pecan , with sourdough starter. I like the cayenne in these!
