
We had steak last night and I wanted to tap the Poggio Amorelli Chianti Riserva from our recent trip to Italy. A lovely aroma of cherries and cedar, with a nice long lingering finish that was delightful to end with. We were having steaks.
I began to ponder how this wine compared to Cakebread with steak. My husband said, "so take a glass from it" … Oh right, that's totally an option now.
Cakebread used to be my go-to "nice" wine but I haven't had it in a few months since I started studying wine. I don't think I realized how buttery this wine smells. We had Ruth's Chris so I found that Cakebread ended up being a better pairing with the steaks since they were cooked in butter.
I think anytime I open a nice wine, I might be comparing it to how I feel about Cakebread or Silver Oak to see if those two still stand up in my mind. The Coravin is so fun.

the coravin really does change how you think about your whole collection doesnt it. i had a similar moment where i realized i could just do side by side comparisons on a tuesday night without committing to finishing two bottles. totally shifted my perspective on what “opening a nice bottle” even means anymore.
also interesting point about cakebread with butter-cooked steaks, that makes a lot of sense actually. the richness playing off each other. if you’re studying wine and revisiting your old favorites with fresh eyes, you might be surprised how your opinions shift over the next few months. i went back to some wines i used to love and was like oh wow this is way oakier than i remembered, my palate had just moved without me noticing
In your experience how long still bottled after using the coravin is the wine “the same” as the first pour?
I have invested in one but still a bit anxious, namely because I don’t have enough data points, that if I use it on one of my best most special bottles I will come back to find its gone flat.
I absolutely love my coravin. I’m going to do the same tonight, cooking a ribeye while my wife goes out, and I can pour myself a glass of nice wine without feeling like I’m going to waste it.
