My friends are obsessed with apple juice and want me to make and ice cream with it but I have no clue how that would work. Any ideas I could use.

    Try making a sorbet or sherbet if they really want the milk content.

    you’ll have an easier time working with apple juice frozen concentrate than regular apple juice, because of the water content

    reconstitute the concentrate with philadelphia base (adjust the water down some to account for what’s in the concentrate,) consider hitting it with some vanilla, lemon, or some mulled cider spices, make it, and begin adjusting it to taste.

    should work pretty well right out of the gate, but you can buy apple flavor extract or freeze dried apple powder to pump it up if necessary.

    never tried it, but my instinct says custard base would maybe be an improvement; i suggest starting with philadelphia just because custard base is more difficult to balance

  5. I’ve done apple cider flavors before by creating an apple cider reduction as a base. It takes 6 to 8 hours to fully reduce but is absolutely worth it to get rid of all the water content.
