Chana saag – chickpea curry with spinach

    Made a simple comfort bowl with fluffy quinoa and rice, chickpea and spinach curry, and fresh onions on the side.

    Once the chickpea curry is cooked, I like to stir in a few cups of chopped spinach at the end. It wilts down quickly and gives the dish extra flavor, color, and nutrition.
