This is a great Italian winter salad! The combination of the crunchy apples, the fresh fennel and celery and the walnuts, together with the Pecorino cheese, lemon juice and good quality olive oil, makes this an incredible salad that can be enjoyed on its own or as a side dish.

  1. I make a similar one but with no cheese:

    Sliced fennel on the mandolin (super fine)
    Matchstick sliced Granny Smith Apple
    Arugula
    Fresh mint leaves
    Extra virgin olive oil
    Lemon zest and juice
    Salt & pepper
    Super fresh and simple. It pairs well with fish (particularly branzino) and pork chops.

  2. Unfortunately I can't stand fennel or raw celery so my salad would just be apples, walnuts and cheese, but still good 😆

  4. This sounds too much aroma to me. Feel like I’m going stuff myself with fragrance pouch. Even the burp would smell like mosquito spray.
