Looks tasty.
In my town we have something similar.
No cheese or bok choy. But instead it’s a green cabbage slaw made with a gochujang aioli.
Also a bit of kimchi to finish it off.

Bok choy is not Korean at all. (Blanched spinach would be.) Westerners think a common Chinese ingredient is universally Asian and therefore also Korean. Better to call it a bulgogi burrito, which has a nice alliterative, trisyllabic ring to it!

My mom makes kimchi with bok Choy. Not a long fermented one but one she mixes up and we ate right away. Amazing. Forgot what it’s called in Korean. She’s made this dish for as long as I can remember. So to all those who say it’s not Korean because it has bok Choy are just gatekeeping and not doing a very good job of that either…
