So I love me some poppy seed cake/sweet bread. For this recipe I used an 8oz tub of Noosa Lemon Greek Yogurt. I followed the rest of the recipe as written, except I didn’t have any lemon zest. The batter was very thick and wet, and didn’t rise much, which was good because it was a very full pan! I used a NordicWare cinnamon loaf pan which is 12x4x2.5 inches but is like a half-pipe shape. I baked it in a 350 oven for about 37 minutes.

The result is more sweet bread than cake, and the lemon really pops out and cuts down on the sweetness. It’s got a nice crumb. I couldn’t say if using a smaller tub of yogurt would alter the texture. Personally, I think it would be great warm with a thin layer of butter!

    Is it good? Is it the same recipe that you remember?

    It might get greatly enhanced if you put store-bought lemon frosting on it.

  2. Classic Weight Watchers Lemon Yogurt Poppyseed Cake as I made it

    8oz tub of Noosa Lemon Greek Yogurt

    2 cups all-purpose flour

    ¾ cup sugar

    2 eggs

    ¼ cup vegetable oil

    2 tablespoons lemon juice

    2 tablespoons poppy seeds

    2 teaspoons baking powder

    ½ teaspoon baking soda

    ¼ teaspoon salt

    1 teaspoon vanilla

    Instructions

    Heat oven to 350°F (175°C).

    Grease a 9×5 loaf pan or small bundt pan.

    In a bowl whisk together:

    flour baking powder baking soda salt poppy seeds.

    In another bowl mix:

    yogurt sugar eggs oil lemon zest lemon juice vanilla.

    Fold dry ingredients into wet ingredients until just combined. Pour into the pan. Bake 40–45 minutes until a toothpick comes out clean. Cool 15 minutes before removing from the pan.

    I love Nordicware pans (and bundt pans in general). Such a fantastic way to get a nice-looking cake without having to use a ton of frosting.

    Noosa is a high-fat yogurt, and very dense. You might try it with a non-fat yogurt next time to see if it more closely resembles the texture of the original recipe, unless you’re going to stick with what you’ve done! Looks great, and I just had a tub of lemon Noosa for breakfast today because I felt like treating myself!
