This recipe combines grilled chicken thighs seasoned with za’atar, served on a bed of fresh fattoush salad.
Ingredients
• 4 to 6 boneless chicken thighs
• 3 tbsp olive oil
• 1 tbsp sesame seeds
• 1 tbsp marjoram
• 1 tbsp thyme
• 1 tbsp sumac
• 1/2 tsp salt
• 1 to 2 heads of romaine lettuce
• 2 tomatoes
• 2 Lebanese cucumbers
• 1 red or orange bell pepper
• 6 fresh mint leaves
• 1 pita bread
• 1/3 cup olive oil
• Juice of 1/2 lemon
• 1 1/2 tsp 1 teaspoon sumac
• 1 clove garlic, finely chopped
• Salt and freshly ground pepper
Instructions
1. Prepare the marinade for the chicken by combining the spices and olive oil, then coat the chicken pieces.
2. Grill the chicken until cooked through and golden brown.
3. Prepare the salad by combining the lettuce, tomatoes, cucumbers, bell pepper, and mint.
4. Prepare the pita chips by seasoning and baking them.
5. Assemble the salad by adding the grilled chicken and pita chips, then serve.
