🥒 Crispy Zucchini Rings Recipe

Ingredients

2 medium zucchinis, sliced thin and cored
¼ cup cornstarch

Egg Mixture

1 egg
¼ tsp salt
¼ tsp paprika
¼ tsp garlic powder
¼ tsp pepper

Crumb Coating

Cornflake crumbs (or crumbs of choice)
1 tbsp dried herbs of choice

Instructions

Toss zucchini rings with cornstarch until fully coated.
Mix egg and spices, then add to zucchini and coat well.
Toss with crumbs and herbs until evenly coated.
Arrange on a parchment-lined, greased baking tray.
Spray lightly with oil.
Bake at 400°F for 20–25 minutes, flipping once for even crisping.

🥣 Creamy Dill Dip

½ cup mayo or Greek yogurt
1 tbsp dill
Salt & pepper to taste
Crushed garlic to taste

Mix and chill for best flavor ✨

  4. Yum! I’m a Nebraskan, where we love to take a perfectly healthy vegetable and fry it up! Guilt free idea, love it.
    Hot tip: use a pineapple corer in the center before slicing.

  5. Question: since we are using parchment paper, couldn’t we bake without the olive oil? Do you think they would get just as crispy?

  7. This is such an easy and delicious recipe. I substituted a flax egg for the egg and coconut yogurt for the dip to make a vegan version. Its absolutely delicious either way. Thanks Chef❤
