She is the softest loaf I've ever made!!

450g Canadian strong white flour
50g spelt flour
360g water
100g starter (straight from fridge)

Mixed in a stand mixer for 10 mins and then left to rest for one hour.

Lamination.

Bulk ferment 12 hrs approx.

Overnight cold proof

preheated pan 35 mins 220c (fan oven runs hot!)

Baked lid on with ice 30 mins

Lid off for 10.

I'm soooo proud of this one!!!
