Authentic falafel comes from Egypt, in Coptic Egyptian language falafel means lots of beans (facabeans) and so it’s made of beans. This is the lebanese one not « the authentic falafel »
That looks delicious, question the baking and air frying do they get the same crispness as the fried ones and is it the same recipe or you change something?

I agree, there is a time and a place for canned chickpeas and good uses of the aquafaba, particularly for vegans. If you're going to take the time to make falafel and fry them in oil, you're already putting in time and work, might as well use quality chickpeas.
I just made this today, and it was a huge surprise. The last time I made Falafel, it was flooding in the oil in pieces 😅😂. However, I ended up adding a little bit of cornstarch because it was too wet for me. Otherwise, it was delicious. Thanks for the recipe.
