My first effort at smoking beef Dino Ribs. Wow — the flavor’s amazing. Salt, pepper, garlic powder and dried rosemary. 😊

    Ok, couple questions. Why would you put rosemary on beef and why are those sausages so big?

    There’s a reason you don’t see people using herbs in BBQ rubs. The oils in them don’t survive the long cook times. It’s just chemistry.

    If you’re set on adding rosemary, do it at the very end of the cook, when you pull them off to rest.
