    Corning the brisket salts the shit out of it. Subsequently covering it in a premade, heavily salt based rub is too much salt IMO.

    I prefer an equilibrium cure, so it’s perfectly salted, then a mostly black pepper and coriander based rub.

    Lastly, oil as a binder, it transfers heat better than anything else. Give it a try.
