

I stopped by Menkoi Sato in New York after it reopened under new ownership. A lot of people in the NYC ramen scene were curious about what would change, so I asked the new owner a few questions.
Most of the recipes are staying the same, which regulars will probably be happy about. They also added a new ramen called Fiber Ramen with vegetables, mushrooms, wakame, and ground pork stir-fried with shio-koji before going into the bowl.
It was interesting hearing why the new owner decided to take over the shop and what they want customers to know moving forward.
