Recipe:
Bajra Pita Pockets & Sprouts Falafel
Preparation time: 30 minutes
Cooking time: 20 minutes
Serves: 3-4

Ingredients:
For the Pita bread:
1 cup bajra flour
2 tbsp butter
For the Falafel:
2 cups sprouted green moong
2” ginger
2 green chiles
Handful of coriander leaves
Salt to taste
Oil to fry
sesame seeds to coat

Method:
Grind together all the ingredients for the falafel. shape into falafel, coat with sesame seeds and fry till golden.
Boil 1 cup water with the butter. Add the bajra flour, mix well and cover and rest for 10 mins. knead well for 5-6 minutes. Make small rotis and puff over the tawa.
Cut into halves and stuff with hummus, lettuce, tomatoes and falafel and enjoy,
