    Too much cocoa powder. It turns the macaron into something more like a brownie.

    Be sure you’re using a low fat content cocoa powder— the extra fat causes wrinkly tops.

    Agreed. Too much cocoa. You can really only use a tiny amount and if you want a richer color use food coloring.
