    the butchers at my local grocers have a skill of hiding a pound of fat on the underside of these, on top of the pound of fat that’s on the topside.

    that Heb butcher deserves a raise.

    Wish we had an HEB around here. You can’t get a low grade ribeye for $17 here.

    I bought two Wagyu chuckeye steaks (two steaks with the same muscles next to the ribeye) at the Boerne HEB. Sous vide for six hours with Uncle Chris’ Fiesta Brand Steak Seasoning, then over oak coals. I loved mine, fork tender. My wife, not so much. She likes her filets with no fat.
