my wife threw 4 lbs on chicken breast in the slow cooker with some chicken stock with no veggies, no seasoning, and no plan. what am I supposed to do with this?

    Shred it and then jazz it up in different meals. a pasta bake, mexican burritos or enchiladas, or some barbque.

    Tell her next time to salt the stuff!

    if you shred it and add a bunch of salt to the stock, then let the chicken soak for a bit, it usually will absorb enough seasoning to be serviceable. if that doesn’t work just cover it in sauce

    Season it just before you serve. Salt, vinegar/acid, seasoning blend (Cajun, lemon-pepper, whatever spices you like.). Season the liquid, taste the broth, re-season, etc, and once it tastes good to you, that’s dinner. It won’t taste as good as if you’d seasoned carefully before cooking, but it won’t suck.     I’d shred it, freeze in portions, and use it for tacos, nachos, buffalo chicken dip, etc.

    Depends on how much time you have left and what you want to make out of it.

    I’d say remove the chicken to let it cool a while before shredding.

    You could make chicken soup by chopping up some carrots, celery, and onion and saute in a stock pot or Dutch oven on the stove too until the onions begin to become translucent. Pour in your chicken broth there from the slow cooker and add any extra water you want if you need more. Pop in some seasonings and a bag leaf or two. Return chicken to the soup and then cook noodles to add.

    Or you could shred up that chicken and add a little broth to make sure it’s super moist and then make chicken salad for sammies.

    Or… Let’s see. Enchiladas? Cook up some onion, toss in the shredded chicken and season with cumin and salt and pepper and make and bake some enchiladas.

    Could also use it in pasta or noodles.

    Throw it in a kitchen aid mixer to shred, or use your preferred method. Pop it back in the crockpot with a bottle of buffalo sauce, some cream cheese, maybe diced onions or jalapeños. Shred some cheese in there and mix. Add some salt, chili powder, cayenne, garlic, maybe ranch seasoning. Leave on low til cheese melts. Dip tortilla chips in it.

    For future reference, I just feel like the slow cooker isn’t the best way to cook chicken breast. Look up an easy recipe for poached chicken breast and you’ll have the same thing done in 20 minutes.

    Basically all you do is put the chicken in a pot, fill with water, bring to a boil, turn off the heat, wait 15-20 minutes. and it’s done. The time differential is based on if it’s small breasts or BIG BREASTS.

    Get a pan nice & hot. Put some oil in it. Season your chicken & sear it. Could also add sauce or make a pan sauce too

    Brush some sauce over it & broil it on high for a minute

    Chicken really is not ideal for a slow cooker because it is lean. I would pull it and use it for chicken salad (with mayo) or any type of chicken dish with a sauce or liquid added, like chicken soup etc.

    It’s never too late to season. You can literally toss a ton of seasoning in at the end and it will still taste good.

    Shred the chicken. Either toss it in pasta sauce, BBQ sauce, wrap it up in tortillas and use it for something like enchiladas.

    Enchiladas, tacos, chicken salad, soup, chicken pot pie, buffalo chicken wing dip, white chicken chili, chicken tetrazzini, chicken curry, & you could probably make a passable chicken cacciatore with it.

    If you want them to be relatively whole, I would poke small holes with a fork or score the meat with a knife and marinate the breasts overnight before cooking.
