This pearl couscous salad (or Israeli couscous salad) is full of fresh Mediterranean flavor with ingredients including feta cheese, chickpeas, fresh veggies and herbs, pepperoncini, and olives. It’s doused in my zippy Greek red wine vinaigrette and is perfect for meal prep because it gets even better as it marinates. With hardly any actual cooking required, this is bound to become a new favorite meal prep lunch recipe!
