Actually really good! I layered the ingredients instead of mixing them all together because the thought of an occasional crunchy walnut in the middle gave me the ick. I finely chopped the walnuts and added them last so you would know you were getting a crunchy element—that helped.

    My MIL made similar pineapple cheese jello salad. She used velveeta in tiny cubes. It tastes like cheesecake ish.

    A old work friend, many many years ago made a cheese pineapple salad but it was more like a ambrosia kind of thing. Heavy cream with a beaten egg in a double broiler to thicken, stir in the grated cheddar, pineapple, I think mini marshmallows too. Stirred up and served cold. It was so good. I have always looked for it.

  6. I’m new to this subreddit. Are gelatin mold salads not common here? They were ubiquitous in the midcentury, to such a point that they’re often the emblem of home cooking from that time period, but a ton of commenters are responding to this as though it’s a crazy thing they’re never heard of. 

    I would have imagined there would be tons of these being made by old recipes enthusiasts, they definitely were a typical feature on old vintage cooking blogs and similar venues.

    I’m gonna have to brave it sometime. The pimentos are what I’m having a hard time with. Do they really do anything for the flavor or would omitting them work? I’m asking for flavor purposes, I know I can omit them.

    Pineapple cheese casserole is a mainstay at good old southern restaurants around here. Usually offered as a side dish, it’s really good! Some kind of canned pineapple and cheese concoction, melted and thickened, then you’re with crushed crackers or cornflakes and baked crispy.
