so I usually make salsa verde but my mom has a salsa rojo recipe that she usually makes and I wanted to make it this time but for some reason it came out kinda like a rust color😔

this is actually some of the reasons why I don’t even bother making salsa rojo because it looks weird and none of my family eats it even tho it taste good.

note I did use only 5 tomatoes and á decent amount of greens like

jalapeños

some yellow peppers (don’t know their name)

garlic

onion

Serrano

and cilantro

maybe to many greens causes this but I don’t want it to taste super Tomatoy. I think I’ll just stick to salsa verde…

    Don’t blend it so much and use more tomato. When you blend it until it’s smooth all the colors become a single color.

    Rehydrated dried Guajillo peppers go crazy for that vibrant red color if you don’t want to add heat. Arbols are very red also but quite spicy.

    If you want a vibrant red you need to add red ingredients. Start throwing in greens and yellows will muddy that red fast.

    Use red peppers exclusively if you can.

    If you just want red color without altering the flavor, you could use Annatto, preferably powder.

    If you remove tomato skins and/or add too many greens – it will turn this color. Based on your ingredients – I’m going to assume there was too much cilantro and the yellow bell peppers. Unless you also removed the tomato skins.

    But as others have mentioned – red ingredients makes more red.
