I was inspired to make this shortcake by someone who was looking for an apple cake from this decade.
It’s really good with the whipped cream and walnuts on top.
The steak and chicken diane was good and really fast.

Equally at home at breakfast, coffee time or after dinner, this simple cake can be assembled in less than 15 minutes. Baking time is about 45 minutes.
##For one cake, 6 to 8 servings, you will need: 1 can (16 oz.) sliced Bartlett pears in syrup
##Batter: 1¾ cups all-purpose flour ½ cup plus 2 Tbsp. sugar 1¾ tsp. baking powder ¼ tsp. salt 6 Tbsp. unsalted butter ¾ cup milk 1 tsp. cinnamon ⅔ cup whipping cream
#QUICK & TASTY
##Preparation: 1. Grease and flour an 8-inch round cake pan. 2. Drain the pears. Pat dry with paper towels. Reserve syrup. 3. Stir flour, sugar, baking powder and salt in medium bowl until blended. Cut in butter with pastry blender until mixture resembles coarse meal. 4. Pour the milk over the flour mixture. Toss with a fork just until blended. Do not overmix. 5. Spoon batter into the prepared pan. Smooth top. Arrange pears over batter in circular pattern. Brush with some of the reserved syrup. Sprinkle with cinnamon. 6. Bake at 400°F until wooden pick inserted into center of cake is withdrawn clean and top is golden brown, about 45 minutes. 7. Transfer to wire rack to cool 15 minutes. Brush with reserved syrup. 8. Invert cake onto plate. Remove pan. Return to upright position on wire rack. Cool until serving time. 9. Cut into wedges. Serve with a dollop of whipped cream, flavored with ground cinnamon or nutmeg. Or substitute ice cream (vanilla or peach for the whipped cream.

##For 4 servings you will need: 4 slices top sirloin, about ¾-inch thick 2 Tbsp. butter or margarine 3 Tbsp. thinly sliced green onion 1 Tbsp. Worcestershire sauce 2 Tbsp. finely chopped parsley 2 Tbsp. lemon juice Dash freshly ground pepper 2 Tbsp. cognac or brandy, optional 3 Tbsp. green onion, tops only, sliced Grated lemon peel, for garnish
##For 2 servings: Half of the ingredients.
##For 8 servings: Double the ingredients but use only 3 Tbsp. butter.
##Good served with: Green peas or beans and a salad.
##Preparation: 1. Place steaks between waxed paper and pound slightly with rolling pin or hands. 2. Melt 1 tablespoon butter in a pan. Add green onions. Sauté for a few minutes. 3. Stir in Worcestershire sauce, parsley and lemon juice. Heat through. Keep warm. 4. Melt and heat remaining butter in another skillet. Add steaks to pan. 5. Sauté quickly, about 2 minutes per side. Sprinkle with salt and pepper. 6. Spoon the butter-onion mixture over steaks in pan. 7. At this point, you may flame the steaks, if desired. Heat cognac or brandy, pour over steaks in pan. Ignite. 8. Place hot steaks on serving dish. Pour pan juices over. Sprinkle with green onion and lemon peel. Serve immediately.
