Grilled cheese and tomato soup comprise one of those comfort meals that I never grow sick of. Sure, you can eat it any day of the year, but the pairing really hits differently when there’s rain, wind, or cold weather involved.
Spring officially starts in just a handful of days, but the East Coast is currently getting hit with another storm to cap off winter. So, as I stare out my gloomy window and fight the urge to curl up with a good book before things really start blooming, a delicious grilled cheese sandwich just sounds right.

My friend recently sent me a TikTok that shows the most incredible upgrade to a grilled cheese I had never thought of: Boursin. When I saw the creator spread a layer of herby cheese on the bread, I’ve never been more inspired to run to the grocery store.

How to Make Grilled Cheese with Boursin
Spread a thin layer of Boursin (I used the original garlic and fine herbs flavor) on one side of both slices of bread. Top the Boursin with your favorite cheese. If you’re feeling fancy, the creator in the video used a blend of grated swiss, Parmesan, sharp cheddar and white cheddar; I just used some shredded cheddar cheese because it was what I had in the fridge. Place the second slice of bread, Boursin facing down, on top of the cheese.
Melt some butter in a pan then add your grilled cheese. Once the bread has taken on a nice toasted color, clip it. I add a little more butter to the pan here as well. Once the bottom is your ideal golden hue, take your grilled cheese out of the pan and enjoy.

My Honest Review of Grilled Cheese with Boursin
I was not prepared for how delicious this grilled cheese would be. I’ve loved Boursin since the first time I tried it, but I only ever eat it on a charcuterie board. Now, I think I just found the perfect condiment to dress up my sandwiches — goodbye mayo and mustard.
The Boursin spread made every bite of the grilled cheese taste creamy and rich. Some grilled cheese sandwiches can get a little dry in bites, and this made sure every bite was packed with flavor. The garlic and herb flavor from the cheese add more depth to the sandwich without you really doing or adding much.
Because I am such a good roommate and girlfriend, I also made some grilled cheeses with Boursin to share. Seriously, everyone was a fan.
