Tried using Jealous Devil hardwood briquettes for the first time on some wings and treated them more like charcoal briquettes than wood. That resulted in these WAY over smoked wings. Now I know you gotta get them in a chimney and have them 💯 caught so they burn clean. Either that or don’t be a dumbass and read the lighting instructions 😆.

    as long as you cant smell the smoke inside the fridge from the cold wings, all is good.. my 1st smoke was constant smoke for 3-6 hr on thighs.. the smoke smell was so bad you could smell it in fridge… my family refused eat it, more for me. Yea..

    We would all eat that.
    I’ve learned to enjoy the failures so I can learn from it. Better to learn these things comfortably rather than when hosting.

    To be honest, mine have looked like that more than once cooked in the kettle. Usually caused by me putting in prematurely. They tasted just fine. I’ve found a good alternative is if they are getting to dark too soon, to pull off and put in a air fryer/convection oven to finish as the smoke flavor has already been imbued

    Here is a trick just use a little bit of charcoal and wood pretty much just to create smoke. Put them in there for like 30 mins then cook them in the oven at 425 20 mins per side.

    Poultry absorbs smoke better than anything (outside of fish). Next time either simply use a lump charcoal or use a fruit wood to smoke (like cherry or apple)

    Just remember folks, if something is “over smoked” on its own that just means it’s perfectly smoked as an addition to something else, turn it into a smoky chicken soup, give it a day in the fridge to mellow out and spread those oils throughout and it will be perfect.

    They’re my favorite charcoal to cook and smoke with. They burn very hot compared to others brand I’ve tried.
